A OpencircuitThat will depend on the fan and the amount of sun. I expect that 2 fans need too much power, but 1 x 5V fan should be possible. In addition, you can connect a condenser parallel to the fan to absorb any steam peaks and dips. 

A Jos MarxWith 6 pieces of these solar panels in parallel you will get a little less than 5v 1A, which is enough to charge a power bank... It will take hours in the sun! for 2 amps you already need 12 to 13 pieces. 
